Apple Caramel Oatmeal Cookies

I Love to Bake! I Love Fall! This is really my favorite time of the year, fall foliage, apple picking, my wedding anniversary and the start of the holidays.

In the fall I always end up with so many apples (I love to take them apple picking).  I love getting out into the fall air. Many of our apple orchards around here have hay rides or corn mazes, makes for a great family day!

Baking is a favorite past time for me, it relaxes me. I make the traditional apple crisp, apple pie and applesauce. I am also addicted to searching pinterest for different apple recipes. I have started to create my own recipes some have been misses and some have been hits. Here is my most successful so far,  Apple Caramel Oatmeal Cookies! What better for fall and fair season, apple and caramel together in a cookie, Yummy!
These are quickly becoming a family favorite, I hope they become a family favorite for you also!

Jeannine’s Oatmeal Caramel Apple Cookies with Caramel Butter Cream Frosting

Ingredients

1/2 cup butter
3/4 cup brown sugar
2 eggs
1 teaspoon vanilla extract
1 1/2 cup flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1 1/4 cup quick cooking oats
1 1/2 to 2 cups apples (2 medium apples, chopped)
1 cup kraft caramel bits

Preheat oven to 350
Mix flour, baking soda, salt and oats put aside
Beat butter and brown sugar until creamy
Add 1 egg at a time beat until creamy
Add vanilla
Slowly add dry ingredients
Once mixed, add Apples and caramel
Bake for about 12 minutes (until golden brown)

Yield- approximately 4 dozen

Caramel Butter Cream Frosting

1/2 stick softened unsalted butter

1/4 cup caramel

2 cups powdered sugar (may need more depends on consistency you want)

 

 

Preheat oven to 350
Mix flour, baking soda, salt and oats put aside
Beat butter and brown sugar until creamy
Add 1 egg at a time beat until creamy
Add vanilla
Slowly add dry ingredients
Once mixed, add Apples and caramel
Bake for about 12 minutes (until golden brown)

Yield- approximately 4 dozen
