I love cooking soups in the winter, it’s a hearty comfort food that warms you inside and out. Soups are also so easy to make, especially in a crock pot and there’s always plenty to eat for days or you can freeze for a later date. Being from New England, we love our chowders, so I thought the perfect choice to share with you was Maine Corn Chowder from the #SlowCookerSunday Cookbook by John Legere.

Maine Corn Chowder
- 32 ounces chicken broth
- 1 (15 oz) can cream styled corn
- 1 (15 oz) can whole kernel corn
- 4 cups Yukon Gold potatoes (about 1 pound), diced
- 1/2 cup white onion, diced
- 1 red bell pepper, diced
- 3/4 teaspoon dried thyme
- 1/4 teaspoon black pepper
- 16 ounces bacon, sliced cooked, drained
- 1 cup heavy cream
Add everything, except the cream into the slow cooker. Cover and cook on low for 8 hours.
When cooking time is done, stir in the cream. Add salt to taste, if needed.
