Plan an Italian Easter Dinner
Every year I complain when the holidays come. I know that it requires tons of shopping, prepping, and an entire day of cooking. From appetizers to desserts, everything is tradition. Afterall, i’m planning an italian Easter dinner.
My grandmother did it, my mother did it, and now I do it. This year I put my foot down!!!!! In February, I start by saying, “Let’s eat out!” Then after thinking about it I decided, We can’t go out so instead I’m only having going to have one course and it’s going to be an easy one…… no appetizers – one dessert…That’s it and everybody better be happy….I called mom and told her, “don’t make the candied yams, I’m only making one thing.. I told everyone! and I didn’t invite the 22 people I usually do………..so the day before Easter I’m resting grocery shopping for all the ingredients for the appetizers, lasagna, ham, desserts……YES I CAVED! Why can’t I stick to my guns???
Because………………
I LOVE IT…that’s why. Here I thought it was THEM who made me do all this and it slapped me cold in the face..it’s ME… I was born with it…the more the merrier…the more food the better!
Hi my name is Rachel and I’m addicted to cooking obscene amounts of food.
At least that’s what I feel I should be doing…sitting in a circle with a help group.
I did come to realize that it’s more the prep tradition that sucks me in. My girls are with me the day before. We put on the radio, cook, sing, talk, laugh, and even dance our way through the day. It’s one of the Best days evah!!!!
So here you are……our Dinner. You be the judge and tell me if I’m crazy? Is it really an Italian thing?
We always start with a Mamosa for the toast (cin cin)
The Appetizers:
The Table: This is my favorite part. I’m no Martha Stewart but I love to decorate the table. This year I did a Spring theme instead of an Easter theme.
The antipasto; This is the ultimate salad- when this is served everyone takes their seats (of course they have the SAME seats for every holiday!)
The lasagna
After this is eaten we take an hour BREAK
Next comes the ham, potatoes, candied yams, and vegetables. (this I went light on)
Another hour BREAK
Dessert and coffee
The kids get to run a muck…..in the back door, run thru the house, out the front……let’s give them chalk!
Started with nine at the dinner table and ended with Twenty Two……..Now That’s a Ferrucci Italian Easter Dinner !!!! Wish you could have come by for dessert!!!!

As far as Easter Dinner our tradition is ham, collard greens seasoned with pork drippings, mac-n-cheese, green beans, rice with brown gravy, corn bread, fried chicken and lots of desserts!
