November is the season of bursting colors but it is also when it starts to get cold and the days get shorter. Once the leaves are done it can look pretty dreary outside. Unlike summer when the warmth of the sun can brighten a crappy day, November offers days of shopping and decorating. Let’s face it sometimes bad days can not be mended by spending money. On those days when works sucks and PMS is kicking in full force I turn to November comfort food. The last thing you will want to do is cook so I like to be prepared with already cooked “comfort size” meals.
Some of my favorites are:
Homemade mac n’ cheese in single serve cups – Make your mac n’ cheese and put in the little tins. Freeze and take our as needed. These are also great if you have kids!
Homemade manicotti – Make these ahead of time and pack them in baggies. You can pop as many as you need into the microwave and have them ready within in 7 minutes. When you make your homemade sauce, you can either freeze it in small containers to take out as you need it or freeze the manicotti with the sauce already on them. ** Note – Make sure they are completely covered in sauce if you freeze together**
A big bag of Dove milk chocolate – Do I need to say more???
Mashed potatoes and gravy – When I want my November comfort quick, I do not peel, boil, and make potatoes. I head out to the drive thru at KFC’s. Yes, I’m a lover of their mash and gravy.
and of course all the necessities for the ultimate ice cream sundae! I like to keep vanilla on head in case a want a root beer float, apple pie, or want vanilla in my sundae. I also keep one or two favorite flavors, hot fudge, shotz (some of you may call them sprinkles), and of course whipped cream out of the can.
These comfort foods usually get me through the day or week as needed.

I have never thought of freezing individual mac & cheese cups. What a great idea, I will try it immediately. I also love your manicotti recipe and ideas to freeze individually and as a meal. I’ve not made my own before. Thanks for the ideas.

I am normally ALL about the cheese. Not as much these days but these ideas look delicious. I think my daughter would love the macaroni sooo much. Yum!
