Jerk Chicken and Shrimp with pineapple and mango
This Jerk Chicken and Shrimp with Mango and Pineapple dish is tonguegasmic and it also makes a beautiful presentation! Anyone this is served to will be impressed. I got the idea from a local restaurant but I make it with the jerk recipe I got when I was in Jamaica twenty five years ago. It’s since become a family favorite!
2 Perdue Farms boneless chicken breasts, cut into cubes (They also have diced chicken that is already prepared for you)
12-15 small shrimp, cleaned
1 Pineapple
1 Mango
Rice- your choice
Place the following in a blender for the marinade.
  • 1 bunch green onions
  • 2 cloves garlic
  • 1/2 cup lime juice
  • 2 tbsp. extra-virgin olive oil
  • 1 tbsp. packed brown sugar
  • 2 Tbsp fresh thyme leaves, chopped
  • 2 teaspoons salt
  • 2 teaspoons ground allspice
  • 2 teaspoons ground cinnamon
  • 2 teaspoons ground nutmeg
  • 2 teaspoons ground ginger
  • 2 tablespoons dark rum
  • 2 teaspoons freshly ground black pepper
  • 2 Scotch bonnet peppers (or habaneros), with seeds, chopped
Put aside approximately 1/4 cup, seal and place in the fridge. The rest pour in a large gallon zip-lock bag.
Add in cubed chicken, squish around in bag to make sure chicken is coated well. Place in fridge over night.
Jerk chicken and shrimp
The following day:
Slice pineapple in half vertically, including the leaves. Scope out all pineapple, creating a bowl. Cut pineapple in cubes. Cut mango into small cubes, add it to the pineapple.
In a large frying pan cook your chicken half way. While chicken is cooking, make your rice.
When chicken is half way cooked add shrimp, pineapple, mango, and the 1/4 cup marinade you put aside and mix well.
Scope rice into your two pineapple bowls, top with jerk chicken, shrimp, pineapple, and mango. sprinkle a little parsley over the top and place in pre-heated 450 degree oven for 10 minutes.
You can also mix everything and create the pineapple bowls and bake at 450 for 15-20 mins. I like to start in a frying pan because it creates a beautiful jerk coating that gets slightly browned.
