Dinner can sometimes seem more like a task rather than a creative culinary activity. You don’t feel like a chef but more like a maid. I once complained to my grandmother about making dinner and she looked at me and said, “The next time you sit down to dinner, watch everyone as they take their first bite. See the joy on their face and how much they’re enjoying the meal you prepared.” She went on to say, “Dinner doesn’t need to be a gourmet meal, it needs to have quality ingredients, taste great, and made with love!” My grandmother loved to cook and if you stopped by to see her, you had better have time to sit and eat. She also seemed to be able to grab anything she had lying around, throw it in a pan with a pinch of this and that to create one of her masterpieces. I took my grandmother’s advice and even noticed that she passed this trait down to my mom and now to me. When I was asked to join in the #timetobelieve campaign to share a recipe with you using I Can’t Believe It’s Not Butter, I knew that the Buttery Pasta Primavera would fit perfect.
I’ve been using my grandmother’s recipe ever since I started cooking. It always called for real butter…. remember grandma said always use quality products. Truthfully I was a little nervous about changing the base of the recipe but my family would be the final judges. I made my way to ShopRite- (they know me well there. They happened to open one three blocks from my house, yay me) and bought my ingredients, made my way home and started cooking our old family recipe with a modern twist.
The Recipe
Buttery Pasta Primavera
4 servings
Prep Time: 15 minutes Cook Time: 15 minutes
- 8 ounces penne pasta
- 1/4 cup I Can’t Believe It’s Not Butter!® Spread
- 4 cups assorted vegetables, (cut asparagus, broccoli florets and/or chopped red bell pepper)
- You can use any veggies you love (The above photo, I used Broccoli, yellow squash, green squash, red & green peppers)
- 1 medium red onion, chopped
- 2 large cloves garlic, chopped
- 1/4 cup white wine or chicken broth
- 1/4 cup chopped fresh basil leaves
- 1/4 cup grated Parmesan cheese
Cook penne in lightly salted water according to package directions.
Meanwhile, melt I Can’t Believe It’s Not Butter!® Spread over medium-high heat in large nonstick skillet and cook vegetables, onion and garlic, covered, stirring occasionally, until tender, about 10 minutes.
Add wine; cook uncovered 1 minute. Add penne and toss to coat. Just before serving stir in basil and sprinkle with cheese.
TIP: For an extra kick sprinkle with crushed red pepper flakes!
