If you’re following along, you know that my son has gone off for his senior year at college. I’ve started this From Mom With Love series to share these Easy Meals Under $10.
Pasta Ala Any Veggie
- 1 lb pasta
- 4 Cups fresh Veggies
- 2 Tablespoons Olive Oil
- 2 Tablespoons Diced Garlic
- 2 Tablespoons dried spices
- Grated Cheese
Feeds 6 Adults or 4 College Students
Total Cost Approx $2.00 if using garden veggies and $5 if you have to buy fresh veggies
Cook pasta according to directions and drain
Diced Veggies-Cut enough to cover a cookie sheet. You could pick 2 zucchinis or a bunch of broccoli or container or bag of brussel sprouts. Any fresh veggie works here. I have a huge garden so I picked 2 zucchinis , 2 tomatoes and jalapeños.
Cut veggies into bite size pieces and spread out on cookie sheet lined with tin foil
Add diced garlic and spread over veggies (fresh garlic in a jar)
Spray with cooking spray (olive or canola oil) add salt and pepper and any spice you like (Italian seasoning, oregano, thyme etc.)
Cook at 400 degrees for 30 minutes check oven toss lightly and add additional 10 minutes if needed.
Remove from oven and add to pasta
Toss with 2 tablespoons of olive oil and grated cheese
