We love our chicken. It’s one of the easy meats to cook and there are thousands of recipes you make. Chicken is my go-to when I need to throw something together that’s easy. Ingredients for chicken mexi melts
- 4 boneless chicken breasts
- 2 green bell peppers
- 2 red peppers
- 1 medium onion
- 2 cups Mexican rice- (I make it homemade using this recipe from Yellow Bliss Road)
- 2 cups shredded Mexican cheese
- Tortilla wraps
- Tbsp oil
- Grill chicken breasts
- Slice peppers and onions and sautee’ in a Tbsp oil
- Heat rice ( I pre-make this)
- Fill your wraps with all the goodness, fold
- Place on baking sheet and pop in the over at 250 degrees for 10 minutes. (This varies with ovens so watch them) The tortilla’s will be slightly brown and cheese melted.
