I want some hot stuff, baby this evenin’ Chicken Jambalaya

I love jambalaya or anything that causes my eyes to tear. Every recipe I found had shrimp in it and the Sicilian doesn’t like seafood so I decided to add chicken and andouille sausage! You probably read my Easy Kielbasa and Bacon Slow Cooker Recipe  and saw I was working with North Country Smokehouse. They also sent me their certified humane andouille sausage so I thought I would come up with a fun recipe for our SuperBowl party that the guys would love. We’ll be singing with the iconic Donna Summers, I want some hot stuff, baby this evenin’ Jambalaya, while we make this one!

This recipe is NOT for the faint of heart…..really! It’s not only spicy hot but the amazing flavor comes from bacon fat! Let’s face it! Grandma’s food always tasted the best and she used lard to cook with!

Let’s get to it!

Jambalaya ingredients

Ingredients:

  • North Country Smokehouse Applewood Smoked Bacon
  • North Country Smokehouse Certified Humane Andouille Sausage
  • 4 boneless, skinless chicken breast
  • 1 large green bell pepper
  • 4 small peppers (I used red and yellow for their sweetness)
  • 1 yellow onion
  • 1 can diced tomatoes
  • 2 cups beef broth
  • 3 tsp parsley
  • 2 tsp cajun seasoning
  • 1 tsp cayenne pepper
  • 1/2 tsp Italian seasoning (if you have your own fresh herbs – that’s basil, thyme, oregano) I mix my fresh dried herbs but you can buy it.

Directions:

  • Fry your bacon until crisp- the whole package- drain on paper towels and crumble, adding to crock pot
  • Clean and cube your chicken (place aside)
  • Pour beef broth in crock pot, place on medium
  • Dice all the peppers – throw in crock pot
  • Chop onion- throw in crock pot
  • Add can of diced tomatoes to crock pot
  • Once bacon is done, fry your andouille sausage in the bacon grease
  • Take sausage out and slice- add to crock pot
  • Add chicken to bacon grease, just browning it- place on paper towel to take off excess grease and add to crock pot
  • Add seasoning to crock pot- stir
  • Cover and cook on high for 4 hours

Serve over rice and enjoy! On a side note, I loved it so much that I didn’t wait for the rice the first time!

When I found out I needed surgery, my 1st thought wasn’t the procedure. It was the fear of being handed opioids again with no real choice.
