Artichokes are good for you but they also make a great course in any dinner. These easy Italian stuffed artichokes are usually served before your main meal. You will need one artichoke for each person and it would be smart to make a few extras for left-overs. I try to find the smaller ones because they are more tender.
What You Need: For 8 Artichokes
8 Artichokes
5 cups Seasoned Breadcrumbs
2 tsp Garlic Powder (Garlic salt will make it too salty, the cheese will give a salty flavor)
1/4 cup Grated Parmesan Cheese
2 tbs Parsley (Crush as you place it in)
1/4 tsp Black Pepper
1/2 cup Olive Oil
Directions:
- Cut stems off artichokes so they stand on their own
- Cut very top off and cut all pointed tips off leaves
- Pull leaves outward expanding the leaves
- Rinse artichokes
- In bowl combine breadcrumbs, garlic powder, Parmesan cheese, parsley, and pepper. Mix well
- Stuff each leaf of the artichoke. I start in the middle and work my way out.
- Stuff all artichokes
- Fill large pot with 1 inch of water on the the bottom, place artichokes in pot.
- Drizzle oil over the top coating the crumb mixture.
- Cover, and cook on low for 80-120 minutes or until leaves are tender
NOTE*** You can also cook these in the oven in a baking pan. Add water and cover tightly with aluminum foil. This is best when you cook more than can fit in the pot.

I love the taste of artichokes in dishes and on pizza, but have never tried to make a whole artichoke. I never knew the smaller ones are more tender. Will try these soon, they are beautiful to serve.
